If one chocolate bar isn’t enough

We all have that one person in our lives. She’s the chocoholic with the candy bar in her desk at work, chocolate chunks in the freezer and an emergency pack of kisses in her purse.

And when I say chocolate, I don’t mean the stuff you get at the corner store. Taza chocolate is a bean-to-bar manufacturer. That means they don’t take the chocolate and melt it. That means they take the bean from their preferred growers, Taza grinds it on its own wheels just outside Boston, and rolls it on its own stone refiners. And they don’t Conch. That’s rounding out the cacao particles and mellowing the flavor by releasing some of the more volatile acids and fruity flavor components. They wouldn’t take any of the flavor out for you. And that’s important for those who really need their chocolate.
